Citrus Persimmon Bread Pudding

Growing up, my cousins and I saw many seasons pass through my grandparents’ house in Oklahoma. Winter nights meant steaming pots of my aunt’s phở chay and whispering under warm blanket forts. In the spring, our fingers became green and fragrant from plucking Vietnamese herbs for spring rolls. We spent our summers making our own adventures in the closets and under the tables (and doing math). In the fall, we were filled to bursting with ripe trái hồng (Fuyu persimmons) from my grandmother’s tree. No matter the season, our cheeks were always full of laughter, and our grandparents were always full of love for us, to the brim and more.

Fuyu persimmons were my favorite fruit growing up, especially the ones from my grandmother’s tree. When eaten young, Fuyu persimmons are crisp and refreshing. At full ripeness, their texture becomes deep and tender–gelatinous globs of honeyed sweetness that melt in your mouth and make a mess when you eat them. My favorite stage to eat them is the middle stage, in which the fruit retains some bite, while still being delectably fleshy and succulent in texture. Persimmons are also amazing when dried–they are a gooey treat with a really satisfying texture. Continue reading

Harry Potter Felix Felicis Potion // The Plant Philosophy Collab

To say that I love Harry Potter would be an understatement. I grew up reading the series and it will always hold a special place in my heart…the stories and the characters will stay with me, until the very end. *sobs* I love it so much.

Naturally, when Margaret (The Plant Philosophy) and I decided to meet and hang out this month, I immediately suggested a Harry Potter recipe collab, in the spirit of Halloween! We decided to put our own spin on a couple of potions from the books: Polyjuice (on Margaret’s blog) and Felix Felicis (below). It was too much fun!

If you’re behind in potions class, don’t worry, I’ll catch you up to speed. Felix Felicis, also known as liquid luck, is a golden concoction that enables the drinker to be successful in everything they pursue.

“Then, slowly but surely, an exhilarating sense of infinite opportunity stole through [Harry]; he felt as though he could have done anything, anything at all…” – Harry Potter and the Half-Blood Prince

Now, this Felix Felicis juice recipe won’t guarantee you magical luck, but it will certainly make you feel refreshed and ready to take on whatever challenges lie ahead in your day. The flavor starts off fresh with bright citrus notes, ending with an invigorating kick of ginger.

Harry Potter Potions | Plant Crush x The Plant Strong Vegan
In the series, Felix Felicis is a difficult potion to brew, taking at least six months. Thankfully for us, this recipe takes almost no time at all to whip up. If you’re making it for a Halloween party, feel free to multiply the recipe to your needs.

4 Ingredient Chai Latte Ice Cream (Nice Cream)

It’s almost the end of October and I don’t know about y’all, but I’m frustrated because fall still hasn’t really hit Texas yet. It’s not hot anymore, but today was humid and muggy. I did a run outside this morning and was feeling all kinds of nope (but at least I got through it)!

It seems like we only get a total of ten days of pleasantly crisp fall weather, before we are plunged unceremoniously into the despairs of winter. But let’s not dwell on that inevitable doom and try to make the best of things…

Autumn Apple Pesto Pizza

This has been the most requested recipe ever on my Instagram.

Since today’s the first day of fall, I decided it would be a good day to finally share the recipe! My friend Jerry first introduced me to the concept of apple pizza, a few years ago. Since then, I’ve made many different versions. Here’s the most recent version (it probably won’t be the last apple pizza you see on this blog)!  Continue reading
