What’s the one food you could eat everyday? For me, the answer would be spring rolls! There have been weeks where all I eat for dinner are spring rolls, especially during the long blazing heat of Texas summer. There are just so many ways to make them–they’re so fresh and fun! Plus, I think it’s the best way to get a lot of greens in (I’ll take spring rolls over salad any day).lime

It’s actually amazing that I don’t have a spring roll recipe on the blog yet, considering how much I eat them. Today, I am happy to share this spring roll recipe with you, in collaboration with one of my favorite vegan brands based in Texas: It’s Jerky Y’all! Guys, I’m participating in VeganMoFo again! VeganMoFo is a month-long challenge to post as much vegan food as possible, kind of like NaNoWriMo. It’s been a few years since I took part, but I decided (to be crazy) and challenge myself this month. It’s the most insane time for me to do this, because I’m in the middle of my design thesis for graduate school (more on that as the month progresses). Vegan options at PhoXpress are available and expanding

I must say that I am extremely picky about my phở, and most Vietnamese dishes in general. I blame the fact that I grew up in a Aulacese (Vietnamese) household full of food enthusiasts. 

I have heard horror stories about vegan phở at non-vegan establishments. The worst case scenarios recounted to me often resembled the following description, more or less: a bowl of rice noodles in salty broth, laden with MSG and some lettuce. To call that sad scene “phở” is a culinary crime and an insult to the taste-buds. I can’t even process the lack of effort–a complex, aromatic broth is the key to any phở, vegan or not.

Based on such descriptions alone, let alone my Viet foodie background, I decided long ago that I would avoid eating phở outside my own home altogether. However, in the past month, I have tiptoed, quite warily, might I add, into giving a couple of places a chance.
