Veggie Burrito Bowl

My go-to: a veggie burrito bowl without the dairy! This colorful bowl comes with cilantro rice, red bell pepper slices, carrot strips, shredded zucchini, purple cabbage, jicama, black beans, corn, and an addition I haven’t seen elsewhere: slivers of mango. I particularly enjoy the combination of these fresh flavors smothered in guacamole, with a drizzle of lime juice and several dashes of black pepper.
